After trying several recipes, I finally found the BEST basic keto chaffle recipe! Not only are they tasty all on their own, they make amazing keto friendly buns for sandwiches.

I love to double or triple the recipe and store them in the freezer for quick low carb meal options. At just under 3 net carbs per serving, you can enjoy them any time of day!

If you’re new to keto, you’re probably wondering “what is a chaffle?” I’d never heard of them until I started on my low carb quest.

In basic terms, a chaffle is a low carb waffle made with cheese and eggs instead of waffle batter. When you make them in a mini waffle maker, they are the perfect size for replacing buns and sandwich bread. A lifesaver when you’re on keto!

WHY I LOVE THIS CHAFFLE RECIPE

  • They are crunchy on the outside, soft and chewy on the inside.
  • Instead of using a whole egg, you just use the egg whites, so it doesn’t have an “eggy” taste.
  • Making a chaffle with almond flour gives it a better flavor and texture, much more like a regular waffle.

A 4″ mini waffle maker is typically used to make chaffles. I have the Dash mini waffle maker, and I love it! The small size makes it perfect for using the chaffles as buns or sandwich bread. Plus it comes in tons of cute colors and patterns.

If you don’t have a mini waffle maker, you can use a regular size one. It’s just harder to get the uniform round shape and smooth edges. Your chaffles will taste great, but I think it’s harder to eat a sandwich with jagged edges!

Is mozzarella cheese keto-friendly?

Yes, mozzarella fits perfectly into a low carb diet. An ounce of mozzarella cheese has only 1 gram of carbs, about 7 grams of protein, and 5 grams of fat.

And you can even use the pre shredded cheese for this recipe. I like getting mine at Costco and freezing one of the bags.

How many carbs are in a chaffle waffle?

There are dozens of recipes out there with different ingredients, but since they are made for the keto diet, all of them have low net carbs. This recipe clocks in at 2.7 net carbs for a good sized chaffle that will fill your mini waffle maker.

HOW TO MAKE A CHAFFLE WITH ALMOND FLOUR

  1. PREP – If your cheese isn’t pre shredded, you need to grate it. Plug in your waffle maker so it will be nice and hot.
  2. DRY INGREDIENTS – In a small mixing bowl, dump the mozzarella cheese, almond flour, and xanthan gum. Stir together until all the cheese is coated.

  3. EGG WHITES – Whisk together you egg white until foamy. Pour it over the cheese mixture. Quickly stir together. Moisture will bind with the xanthan gum, so you need to work fast so you don’t get clumps.

  4. COOK – Divide the mixture in half. (I like to roll them in balls.) Place on on the hot waffle maker. Press the lid down with a hot pad. Cook for 4-5 minutes, or until golden brown.

  5. COOL – Carefully use a fork to remove the chaffle. Place it on a wire rack or plate lined with a paper towel. It will continue to crisp up as it cools.

How to store leftover chaffles?

You can keep leftovers in the refrigerator for 4-5 days. I like to pop them in the toaster just for a few seconds to crisp them up before serving.

Thankfully, you can also freeze chaffles. I like to make a double or triple batch so I can always have them on hand. After they cool, pop them into freezer ziplock bags. They will last for 5-6 months in the freezer.

You can let them thaw at room temperature, or just heat them frozen in the toaster, air fryer, or even on a skillet. I do not recommend the microwave, they become soft and rubbery.

KETO CHAFFLE RECIPE VARIATIONS:

  • For an extra crunchy exterior on your chaffle, you can sprinkle a bit of cheese right onto the waffle maker before adding your mixture. Then sprinkle a bit more cheese on top before closing the lid.
  • You can add any seasonings you like. Garlic powder, onion powder, and herbs are all tasty!
  • For a fluffier chaffle, you can add about 1/4 tsp of baking powder.
  • Mozzarella cheese is traditionally used, but you can use another cheese like cheddar, colby jack, or even pepper jack. I’ve tried half mozzarella and half cheddar, and that was tasty!
  • If you want a more bold flavor, you can add 1/4 – 1/3 cup of parmesan cheese. Your chaffles will be larger, or you can make three chaffles.

Instructions

  1. Preheat your mini waffle maker.
