Breakfast Gravy is a Southern Thing

Breakfast gravy, at least the way I know it, is kind of a Southern thing. My dad would make it based on a recipe his grandfather made. I always loved it. Of course, Great-Grandpa Joe’s version wasn’t vegan. For my part, I was never able to make good breakfast gravy anyway until I started working on vegan versions, and oh my yum!

Cooking with Beyond Breakfast Sausage Patties

Start with a package of Beyond Breakfast Sausage Patties. I’ve always preferred the spicy but the regular are also super tasty. These are ordinarily kept frozen so just remove them from the freezer and allow them to sit for a few minutes at room temperature. That’s really all that’s needed for them to be softened enough to be chopped. Then it’s easy to just chop the sausage patties into small pieces with a sharp knife.

The Beyond Breakfast Sausage Patties chop up easily if left at room temperature for a few minutes,

Place the chopped sausage patties into a heavy skillet with two tablespoons of oil and sauté over medium-high heat until the sausage pieces begin to brown. This will only take a few minutes.

Saute the chopped vegan sausage until lightly browned.

Spice Up Your Breakfast Gravy

If you like your breakfast gravy peppery or spicy this is the time to add in some cracked black pepper and/or crushed red pepper flakes. I love a bit of spice, so I add additional dashes of both black pepper and red pepper flakes … more or less depending on how spicy I’m feeling.

The gravy is thickened with flour. I’m gluten-free so I use Bob’s Red Mill 1 to 1 Baking Mix, or I use my own mix which is this Gluten-Free All-Purpose Baking Flour Mix. But use your favorite flour by all means. This is also great with regular wheat flour!

How to Get Lump Free Gravy

So, flour acts weird then it tries to mix with water. It’s kind of like me in a super social situation … it just balls up and refuses to interact.

The scientific chemistry version of why this happens is that when clumps of starchy flour are introduced to a hot liquid the starch on the outside of the flour clump soaks up the liquid and almost immediately cooks and gelatinizes. This results in a rubbery balloon of cooked flour enclosing the still dry and powdery innards.

The way to get lump-free vegan gray is to get the flour particles surrounded by hot oil first before putting the liquid into the mix, which also works better if the liquid is cool.

How to Make a Vegan Roux

For this gravy, to make it smooth and without lumps, I first make a roux. That’s simply a mixture of flour and fat cooked together. This is one method to get the flour and fat to mix before adding in the liquid.

To make a vegan roux, just combine equal parts flour and fat and heat.

To create the vegan roux for this recipe, simply add three tablespoons of flour to the oil in the pan the sausage is cooking in. The oil and flour should be about equal so if the flour is too dry just add a bit more oil.

Simmer the vegan roux for just a minute. This is a whiter gravy so we don’t need to brown it.

Stir it and let it simmer for about a minute until the flour is all incorporated into the oil. Then add the milk and whisk until the gravy begins to simmer. Whisk and simmer for about a minute, until the gravy has thickened.

Serve this yummy vegan gravy hot over fresh biscuits, toast, or even bagels. Store any leftovers in an air-tight container in the fridge for up to three days.

Ingredients

  • 1 package Beyond Breakfast Sausage Patties (spicy or regular)
  • 3 tablespoons oil (we used avocado oil)
  • 3 tablespon allpurpose flour (GF or regular wheat flour)
  • 1/2 cup water
  • 3 cups unsweetened unflavored plant based milk (we use So Delicious Unsweetened Coconut Milk)
  • pinch black pepper or to taste
  • pinch crushed red pepper or to taste

Instructions

  1. Remove the Beyond Breakfast Sausage Patties from the freezer and allow them to sit at room temperature for a few minutes.
  2. Using a sharp knife, chop the sausage patties into small pieces.
  3. Place the chopped sausage patties in a heavy-bottomed skillet and saute over medium-high heat until the sausage chunks are lightly browned.
  4. Leaving the sausage chunks in the pan, sprinkle the flour into the oil in the bottom and stir until well incorporated with the oil. If the flour is too dry, add a little more oil,
  5. Add the 1/2 cup of water and stir to loosen any bits on the bottom.
  6. Whisk in the plant-based milk and continue to whisk until the gravy simmers and then starts to thicken,
  7. Add in black pepper or crushed red pepper flakes to taste, And if this isn't salty enough for your tastes, add a bit of salt in as well.
  8. Serve over fresh biscuits or toast. This goes really well with a side of Just Egg scramble!
