Best cheese for potatoes au gratin?

You will want to select sharp, bold cheeses. Old cheddar, gruyere, Swiss or feta would be awesome choices.

What is the difference between scalloped potatoes and au gratin?

Most people will say there is NO difference. Both use thinly sliced potatoes cooked in a casserole dish. Scalloped potatoes ALWAYS have a cream sauce. Au gratin is ALWAYS is cooked with cheese. This recipe contains both. Scalloped potatoes usually have a breadcrumb topping. Gratin Dauphinois does not.

Preparing This Sweet Potato Au Gratin Bake

Notes

Have fun with this delicious recipe. You can use a combination of sweet potatoes and Yukon Gold. Also…try a different flavour of cheese.

**NOTE** To make cutting the potatoes easier, you can use a mandolin OR thinly cut a slice off the potato lengthwise, so that it will lay flat. Slice crosswise.

We made this recipe last year during the holidays. In fact we made a regular potato one because I was hoping I’d have this all to myself to finish. 😉 Well, there wasn’t one bit left from the dish. I thought the pan had been washed. And there was half of a pan left of the regular potatoes au gratin. This year I’ll make a double batch of this delicious side. So good.

What is the difference between au gratin and gratin? ›

A “gratin” is any dish that is topped with cheese or breadcrumbs mixed with butter, then heated in the oven or under the broiler until brown and crispy, according to The Food Lover's Companion. The term “au gratin” or “gratinée” just refers to anything prepared in that manner.

What is the white milk coming out of my sweet potato? ›

A milky substance on your sliced sweet potato doesn't mean that your spud is rotten or spoiled. The ooze is actually referred to as "sap." It is made up of sugar and starch combined with the moisture found in the vegetable, and it escapes out of the damage made from the knife. The sap really equals the sweetness.

Why are my au gratin potatoes watery? ›

If you used a pre-prepped potato from the refrigerator section instead of slicing your own, they can have preservatives that make them a bit watery. If you stored your potatoes in water to prevent discoloring, be sure to drain them well and pat them dry before adding to your casserole.

What does au gratin mean in French? ›

The phrase au gratin literally means "by grating" in French, or "with a crust," from the verb gratter, "to scrape, scratch, or grate."

Why did my au gratin curdle? ›

Scalloped or au gratin potatoes are so simple. But it can be frustrating when the creamy sauce and cheese separate or look curdled. The good news is that the dish tastes just fine, even when it looks a little strange. The curdling is caused by high heat, which is hard to avoid in an oven.

How to thicken au gratin potatoes? ›
